Siberian caviar, also known as Siberian Osetra, is a high quality caviar with colors ranging from brownish gray to black. In the mouth, a fresh and fine flavor with hints of nut and butter and notes of dried fruit. Medium size pearls (2.5mm-2.9mm) with firm texture, gentle and smooth.

Native to the rivers of Siberia and Lake Baikal. During the last 10 years this species of sturgeon has been successfully cultivated in the natural ecosystem of the Río Negro in Uruguay.
